Vegan Manchurian Balls!

Ingredients for the vegan balls! 
 finely chop 1 green pepper, 1 cabbage, few carrot, beans , 1 minced onion  ,minced cilantro, minced green chills or jalapeños or seranno peppers or habaneros depending on your spice intake  rating :P
little all-purpose flour
little cornflour
1/2 tbsp rice flour
1 tbsp ginger-garlic paste
2 tsp soy sauce 
 black pepper powder
warm water as required (less than 1/2 cup is needed)
salt to taste
 use an egg or egg whites , if you will as binder . use very  little water.

mix everything together until they are sticky and firm enough to form small balls! if they are not firm - adjust by adding more all purpose and corn  flour to get desired texture. 

once you have the balls made - deep fry them in some neutral oil ( not olive oil) .  I usually shallow fry them .
Set it aside for 5 mins and let it cool and set . Make sure the balls are firm and not falling apart. 

Ingredients for Sauce : 
mince 1/2 onion very fine,  
6 - 8 cloves garlic  -very finely minced , 
finely mince green chillis 

sauté the above together in little hot oil for 2 to 3 mins . 
a tsp of corn flour ,soy sauce - 3 or 4 tea spoons ,1/2 teaspoon vinegar ,and 2 -3 tsp ketchup. 

and let it simmer in low heat until the sauce is slightly thick. 
Add the veg balls into the sauce and make sure all the veg balls are coated with the sauce. 
Garnish with chopped spring onions /cilantro/thinly sliced green chills  and serve . 

If you want more gravy , you can add a little water while preparing the sauce and make it more watery!!! I don't like that personally though!!!

Zaks Camarão à Guilho

Putting this up for my cousin ! Ingredients : 1)Large RAW shrimp - deveined and peeled
2)Minced garlic - lots
4) Fresh lemon juice .
1)Green chillies - cut into thin strips
2)half White onion - chopped
3)Paprika or chilli powder or both if you have both
4)butter - one whole bar
5)Cilantro or coriander leaves chopped finely .
6)dry oregano leaves
7) coconut milk or shredded coconut in water to form a liquid .
8)olive oil
9)corn starch .
Procedure :
Marinate the shrimp with the minced garlic ,lemon juice and salt for 10 mins . keep it aside .
Set the heat on high!
Heat olive oil in a large wide flat sauté pan.
add the green chillies and chopped onions and sauté it a little.
Add the marinated shrimp to it and mix well and continue sautéing for around 30 secs until it is half opaque and half transparent.
Reduce the heat to medium .
Add the coconut milk or coconut water that you have into it .Add the chill powder ,little salt and let is cook for around 3 mins . the shrimp will become opaque and will probably curl up .
Add the dry oregano leaves at the end and the bar of butter and cook for a min more
. Once the butter has melted add a tea spoon of corn starch and keep stirring. so that it becomes a smooth gravy. If u don't stir ,the corn starch will coagulate .
Make sure u have enough water . otherwise add more coconut milk ( or the coconut water u prepared ) .
.. At the end add the half the cilantro leaves and cook for another 30 secs.
Then switch off the heat . and add the rest of the cilantro .
Serve it with white rice or any saffron rice . p.s: You can add chilli powder and salt as required

Chicken & Broccoli over rice

sauté chicken strips in garlic,pepper,salt in olive oil . Then add light cream ,boiled broccoli , boiled peas and lemon zest and stir well .add some fresh carrots at the end. garnish it with any herb ! And serve it over rice

Zaks Shrimp n Calamari Pasta

Ingredients :

for marinade :

cleaned de-veined Shrimp,Calamari cut in rings- no tentacles -only the body, lemon juice,salt ,pepper,paprika ,dry mint leaves.

for cooking :

unsalted butter , minced garlic cloves, ginger chopped into half inch long thin strips ,chopped chives ,chopped spring onions ,olive or grape-seed oil (which i used now) ,chopped green chillies or habaneros,salt,vinegar , a small dash of worcestershire sauce(can use soya sauce and little tamrind extract) ,dry oregano,garlic cloves smashed,angel hair pasta (can use any other thin one tht is available)

Procedure :

1) marinade the shrimp and calamari seperately and let it set for 10 mins .
2) heat the oil in a saute pan .and add the garlic and ginger and chillis(or habaneros)
3) saute it for 30 secs .Add the shrimp and calamari and saute it well for 2-3 mins . add salt if needed .
4) add vinegar and worcestershire sauce ,chives and spring onions and saute it for 30 secs. add the cube of butter and saute it for 30 secs so the butter mixes well. take it and keep it aside
5) Boil the pasta in salt ,with butter,oregano and garlic cloves until its fully cooked.
6) drain the water away and mixt the pasta with the cooked seafood. Sprinkle some oregano and chives on top .
7) Mix with a teaspoon of tomato ketchup and serve with wine :)

Zaks Fried Chicken

Ingredients :

Chicken breast and thigh meat cut to cubes,yogurt,ginger and garlic paste ,lemon juice,salt,chilli powder,sharp cheddar cheese , corn flour.

Exact Procedure :
Mix the chicken in yogurt . then add salt and mix well . Mix Ginger garlic paste .Mix well and keep it aside for 10 mins .
Mix lemon juice and chilli powder . Then add the cheese and corn flour. Mix well .Chicken should be covered in a thick paste .Fry it and eat . The above procedure will make sure the chicken is juicy

Grilled Chicken - Taraggon Sandwich

This is very simple and should not take more than 8 mins to cook

Prepare a marinade with olive oil , lemon juice , black pepper powder , ginger garlic paste , cumin powder ,cayenne pepper or chilli powder , salt , pinch of dried basil and marinade the chicken breasts for 1 hr

Grill or roast the chicken in a flat pan

Slight roast the taragon leaves to bring out the flavour . Split ur roll or bread and toast it mildly with butter or olive oil . Place lettuce(I used organic baby romaine) on one side and the spread mayonaisee on the other and then place the taragon leaves on it .

Place the grillled chicken on the bread and there you go!

Tangy Cranberry Chicken

Decided to cook myself dinner!

You need

worcestershire sauce - 4 tsp
red wine vinegar -2 tsp
kosher salt - as u like
black pepper powder -1 tsp
brown sugar -6 tsp
hot sauce - 4 tsp
paprika - 1 tsp
cayenne pepper -1tsp
2 pinches dried basil
pinch of mint
lemon juice - 2 tsp
dried cranberries - half a cup
olive oil - 2 tsp

Make a marinade sauce out of all the above

Dice 1.5 lb chicken breast into thin small slices . You could freeze up the chicken and then slice it . Its easy to cut thin slices then. You should have

Heat a nice flat pan with olive oil saute the chicken with all the sauce . The brown sugar will caramelize and make it sizzle .It might look like

Keep saute-ing it for about 10 mins . Serve with jasmine rice . If you dont have it. Overcook Basmati rice untill it becomes big and sticky and then serve. You should eventually have

Sprinkle some dried basil or cilantro on top. I went with basil today.

It is fabulous and will surely blow ur mind away.
