Grilled Chicken - Taraggon Sandwich

This is very simple and should not take more than 8 mins to cook

Prepare a marinade with olive oil , lemon juice , black pepper powder , ginger garlic paste , cumin powder ,cayenne pepper or chilli powder , salt , pinch of dried basil and marinade the chicken breasts for 1 hr



Grill or roast the chicken in a flat pan



Slight roast the taragon leaves to bring out the flavour . Split ur roll or bread and toast it mildly with butter or olive oil . Place lettuce(I used organic baby romaine) on one side and the spread mayonaisee on the other and then place the taragon leaves on it .



Place the grillled chicken on the bread and there you go!

Tangy Cranberry Chicken

Decided to cook myself dinner!

You need

worcestershire sauce - 4 tsp
red wine vinegar -2 tsp
kosher salt - as u like
black pepper powder -1 tsp
brown sugar -6 tsp
hot sauce - 4 tsp
paprika - 1 tsp
cayenne pepper -1tsp
2 pinches dried basil
pinch of mint
lemon juice - 2 tsp
dried cranberries - half a cup
olive oil - 2 tsp

Make a marinade sauce out of all the above



Dice 1.5 lb chicken breast into thin small slices . You could freeze up the chicken and then slice it . Its easy to cut thin slices then. You should have





Heat a nice flat pan with olive oil saute the chicken with all the sauce . The brown sugar will caramelize and make it sizzle .It might look like





Keep saute-ing it for about 10 mins . Serve with jasmine rice . If you dont have it. Overcook Basmati rice untill it becomes big and sticky and then serve. You should eventually have




Sprinkle some dried basil or cilantro on top. I went with basil today.




It is fabulous and will surely blow ur mind away.

Zaks Grilled lamb with Sauted Mushroom side

This is awsome and easy !





For the Lamb :

to Marinade :
1) red wine - 2 tsp
2) garlic powder (if u have )
3) minced garlic
4) pepper powder - 2 tsp
5 ) salt - 1 tsp
6) dry or fresh rosemary leaves - 1 tsp
7) extra virgin olive oil - 2 tsp

Make a paste out of the above in a bowl and put the lamb shoulder or chops (whatever u got ) in it and mix wel so that the lamb is coated well . Leave it refrigerator for 1 hr (overnight if possible )

For the Side : (sauted mushrooms)

Baby Bella mushrooms - how much every u want .nicely chopped into big slices .
Corn - how much ever u want .boiled and drained
Worchestershire sauce - 2 tsp
peppercorns -few
coarsley minced garlic - 2-4 cloves
salt to taste
Minced cilantro


Grilling :

Grill the lamb at 170 - 200F for 5-7 mins on either side for medium well done lamb . You could substitute lamb with goat if you like .

Sauted Mushrooms :

In a hot pan roast the garlic until its almost roasted.add peppercorns and roast for another 30 secs . Add the mushroom and saute it till it becomes soft . then add the corn . then add the worchestershire sauce and add salt and saute it for another 3 to 4 mins .

Serve the lamb with sauted mushrooms by the side . Garnish with the minced cilantro




If you do not have worchestershire sauce : try to prep a sauce with tamarind extract and soy sauce, with a little cinnamon and some cloves ...it should work !

If you dont have a grill! just roast the lamb in a pan with mild olive oil coating 5 mins on each side !

Red Snapper Roast

mix Lemon juice- 1 lemon , Turmeric powder- 1 tspn, Red chilly powder- 2 tspn , Pepper powder- 2 tspn, Salt – to taste , Ginger – garlic paste 1 tspn and make a paste ... add lil water if needed ... clean red snapper and scale it and make slits on it .. apply the paste all over the fish and set it aside for 1 hr in cool place...then shallow fry it in a pan in coconut oil ..on all sides to make sure the outside skin is chrunchy...then put the lid on the pan and slow cook it for 10 mins ... then add curry leaves and green chilli and cook for 2 mins .. slice onions - sprinke lemon juice on the onion..mix well.. garnish fish...serve ...


grilled chicken with spicy buffalo sauce

Its pretty simple! marinade the chicken breast with hot buffalo sauce ... grill it at 170F for 12 - 14 mins -

kicker is - after 10 mins sprinkle some coarsley ground black pepper on the chicken and grill for the remaining 5 mins ... u can form ur own grill marks ...

Zaks quickfire garlic shrimp fry

A simple shrimp recipe

All you need is 1 LB shrimp - cleaned ,deveined

5 cloves garlic - minced coarsley

red chill flakes - as much as u want

salt to taste

olive oil


saute garlic til its almost roasted ,add red chilli flakes and saute them for a min ..add the shrimp and required salt and saute/toss it till the shrimp cooks . It should be done in 2-3 mins mostly. toss it around ... add some fresh extra virgin olive oil and toss it around and serve ...







Remember the secret is olive oil - not some other crap oil

Chowmein with a smile

This is what happens when I feel funny








Ok im adding the recipe due to heavy demand :-)


Vegetables :
shred cabbage ,thinly dice carrots ,beans,corn -> boil them for 4 mins and drain the water and dry them
chop lots of spring onions and cut few squares of onions (5 or 6 squares) .chop 5 or 6 garlic cloves .and chop some green pepper(capsicum)
Sauce :
prepare a sauce by mixing vinegar , soya sauce , salt and pepper and finely chopped green chillis and little sugar in a bowl . if need add some tomato sauce or hot tabasco sauce .mix well .keep aside . Make sure there is enough sauce to submerge the veggies fully while we pour it into the veggies later.

Noodles :
boil chowmein/hakka noodles and cook them 70% . drain the water. when the noodles is wet ,toss them in some oil ( veg oil and pinch of sesame oil) and let it dry ...

Procedure :
In a pan saute the onions and garlic cloves and chopped capsicum . Once they are nicely done add the remaining vegetables and saute them together for a min .
. add the prepared sauce and add the noodles and toss them around in very low flame . the quantity of vegetables and noodles should be equal in ratio. cook for 2 mins . and serve on a plate . sprinkle some dry red chilli flakes on top .

Egg smiley :

the pic is self explanatory :-)

heat pan ..break two eggs simultaenously and drop them on pan next each other so tht the yolks are aligned next to each other :-) ... the second egg has to be put next to the first egg before the first egg starts to cook.

once cooked - place the egg face on top of the noodles . two chillies - one for the nose and the other for the smile - roast them lightly and place them on the egg as shown and there u go . Have the noodles with the broken soft egg yolk . Its heaven on your plate :-)

chicken 65

Not many know that I m crazy about cookin! People find it hard to believe that I do cook! Some even find it hard to digest ! not my food ! the fact that i am a crazy good cook :-) ! Ok I am a decent cook!

I will start with the most famous dish from my part of the world !

I have no idea why it is called so ! But I can tell you it sure does taste damn good! It goes well with cold beer :-)



Wash the boneless chicken breasts in water and turmeric . drain the water and wash it with 1 tsp lemon juice and drain it with some tissue or napkin! moisture is a strict no no!

cut the boneless chicken breasts into small cubes .

For 1 pound of chicken, In a bowl take Pepper Powder 1 tsp , Coriander Powder 2 tsp ,Cumin Powder 1/4 tsp ,Turmeric 1/4 tsp ,Corn Flour 2 tsp ,Salt as requried and make a mixture . To this add Red Food Color 1 pinch or 1 drop,Lemon Juice 2 tbsp ,Egg 1 no (or 2 egg whites ) Ginger Garlic Paste 1 tsp and make a paste . Make sure it is not watery .

Put the cut chicken cubes into the marinade and mix it thoroughly . Let is set aside for 30 mins to 1 hr ! If possible marinade it overnight .

Take two cups of oil ,just so the chicken cube is submerged in it like an iceberg . Fry the chicken in batches of 6 or 8 pieces pieces in medium flame for 4 mins each .The batches should not have excessive chicken pieces cluttered together .If there is not enuf breathing space to fry properly,you will lose the texture. Keep tossing them around every 1 min . This is important to make the chicken crispy on out and soft and moist on the inside .


You could stop here and eat it as it is ,with some sliced onions and lime .

But you can make it better

In an another pan heat little oil and when hot, add cumin seeds. After the cumin seed splutter add chopped ginger garlic, curry leaves and green chili and chilli flakes and chilli seeds . Fry for 30 sec. Add 1 chopped onion and fry till they are golden brown. Add the pepper powder, salt. Add the fried chicken to it. Toss them well and add the coriander leaves at the end

Even better would be to try it with chicken with bones . cheers!
