Putting this up for my cousin !
Ingredients :
1)Large RAW shrimp - deveined and peeled <br />
2)Minced garlic - lots <br />
3)salt <br />
4) Fresh lemon juice .<br />
1)Green chillies - cut into thin strips <br />
2)half White onion - chopped <br />
3)Paprika or chilli powder or both if you have both <br />
4)butter - one whole bar <br />
5)Cilantro or coriander leaves chopped finely .<br />
6)dry oregano leaves <br />
7) coconut milk or shredded coconut in water to form a liquid . <br />
8)olive oil <br />
9)corn starch .<br />
Procedure : <br />
Marinate the shrimp with the minced garlic ,lemon juice and salt for 10 mins . keep it aside . <br />
Set the heat on high! <br />
Heat olive oil in a large wide flat sauté pan. <br />
add the green chillies and chopped onions and sauté it a little.<br />
Add the marinated shrimp to it and mix well and continue sautéing for around 30 secs until it is half opaque and half transparent. <br />
Reduce the heat to medium . <br />
Add the coconut milk or coconut water that you have into it .Add the chill powder ,little salt and let is cook for around 3 mins . the shrimp will become opaque and will probably curl up .<br />
Add the dry oregano leaves at the end and the bar of butter and cook for a min more<br /> .
Once the butter has melted add a tea spoon of corn starch and keep stirring. so that it becomes a smooth gravy. If u don't stir ,the corn starch will coagulate . <br />
Make sure u have enough water . otherwise add more coconut milk ( or the coconut water u prepared ) .<br />

At the end add the half the cilantro leaves and cook for another 30 secs. <br />
Then switch off the heat . and add the rest of the cilantro . <br />
Serve it with white rice or any saffron rice .

To this add Red Food Color 1 pinch or 1 drop,Lemon Juice 2 tbsp ,Egg 1 no (or 2 egg whites ) Ginger Garlic Paste 1 tsp and make a paste . Make sure it is not watery .<br /><br />Put the cut chicken cubes into the marinade and mix it thoroughly . Let is set aside for 30 mins to 1 hr ! If possible marinade it overnight . <br /> <br />Take two cups of oil ,just so the chicken cube is submerged in it like an iceberg . Fry the chicken in batches of 6 or 8 pieces pieces in medium flame for 4 mins each .The batches should not have excessive chicken pieces cluttered together .If there is not enuf breathing space to fry properly,you will lose the texture. Keep tossing them around every 1 min . This is important to make the chicken crispy on out and soft and moist on the inside . <br /><br /><br />You could stop here and eat it as it is ,with some sliced onions and lime . <br /><br />But you can make it better <br /><br />In an another pan heat little oil and when hot, add cumin seeds. After the cumin seed splutter add chopped ginger garlic, curry leaves and green chili and chilli flakes and chilli seeds . Fry for 30 sec. Add 1 chopped onion and fry till they are golden brown. Add the pepper powder, salt. Add the fried chicken to it.
