Zaks Camarão à Guilho

Putting this up for my cousin ! Ingredients : 1)Large RAW shrimp - deveined and peeled
2)Minced garlic - lots
3)salt
4) Fresh lemon juice .
1)Green chillies - cut into thin strips
2)half White onion - chopped
3)Paprika or chilli powder or both if you have both
4)butter - one whole bar
5)Cilantro or coriander leaves chopped finely .
6)dry oregano leaves
7) coconut milk or shredded coconut in water to form a liquid .
8)olive oil
9)corn starch .
Procedure :
Marinate the shrimp with the minced garlic ,lemon juice and salt for 10 mins . keep it aside .
Set the heat on high!
Heat olive oil in a large wide flat sauté pan.
add the green chillies and chopped onions and sauté it a little.
Add the marinated shrimp to it and mix well and continue sautéing for around 30 secs until it is half opaque and half transparent.
Reduce the heat to medium .
Add the coconut milk or coconut water that you have into it .Add the chill powder ,little salt and let is cook for around 3 mins . the shrimp will become opaque and will probably curl up .
Add the dry oregano leaves at the end and the bar of butter and cook for a min more
. Once the butter has melted add a tea spoon of corn starch and keep stirring. so that it becomes a smooth gravy. If u don't stir ,the corn starch will coagulate .
Make sure u have enough water . otherwise add more coconut milk ( or the coconut water u prepared ) .
.. At the end add the half the cilantro leaves and cook for another 30 secs.
Then switch off the heat . and add the rest of the cilantro .
Serve it with white rice or any saffron rice . p.s: You can add chilli powder and salt as required
