Not many know that I m crazy about cookin! People find it hard to believe that I do cook! Some even find it hard to digest ! not my food ! the fact that i am a crazy good cook :-) ! Ok I am a decent cook!
I will start with the most famous dish from my part of the world !
I have no idea why it is called so ! But I can tell you it sure does taste damn good! It goes well with cold beer :-)

Wash the boneless chicken breasts in water and turmeric . drain the water and wash it with 1 tsp lemon juice and drain it with some tissue or napkin! moisture is a strict no no!
cut the boneless chicken breasts into small cubes .
For 1 pound of chicken, In a bowl take Pepper Powder 1 tsp , Coriander Powder 2 tsp ,Cumin Powder 1/4 tsp ,Turmeric 1/4 tsp ,Corn Flour 2 tsp ,Salt as requried and make a mixture . To this add Red Food Color 1 pinch or 1 drop,Lemon Juice 2 tbsp ,Egg 1 no (or 2 egg whites ) Ginger Garlic Paste 1 tsp and make a paste . Make sure it is not watery .
Put the cut chicken cubes into the marinade and mix it thoroughly . Let is set aside for 30 mins to 1 hr ! If possible marinade it overnight .
Take two cups of oil ,just so the chicken cube is submerged in it like an iceberg . Fry the chicken in batches of 6 or 8 pieces pieces in medium flame for 4 mins each .The batches should not have excessive chicken pieces cluttered together .If there is not enuf breathing space to fry properly,you will lose the texture. Keep tossing them around every 1 min . This is important to make the chicken crispy on out and soft and moist on the inside .
You could stop here and eat it as it is ,with some sliced onions and lime .
But you can make it better
In an another pan heat little oil and when hot, add cumin seeds. After the cumin seed splutter add chopped ginger garlic, curry leaves and green chili and chilli flakes and chilli seeds . Fry for 30 sec. Add 1 chopped onion and fry till they are golden brown. Add the pepper powder, salt. Add the fried chicken to it. Toss them well and add the coriander leaves at the end
Even better would be to try it with chicken with bones . cheers!
